If you read my last post about 12 things you could do this Christmas season, you would have noticed that I talked about me trying out baking for the first time.

Armed with nothing but a strong love for cupcakes, I set out to bake the yummiest chocolate cakes ever. Here’s a step by step video of me making this recipe on Youtube

To make the yummiest chocolate cakes, you need a few kitchen tools; they are mostly tools you have lying around.

Two Bowls

A Whisk

Tin/ paper cupcake foils

Measuring Spoons

Measuring Cups

A Spatula

A Sieve

An Oven

An Oven Tray

Chances are that you already have all of these in your home but you aren’t baking tools so yes, you will need dry as well as liquid or semi-solid ingredients;

1 cup of flour

1/3 cup of cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup of sugar

1/2 cup of buttermilk or 1/2 cup of regular milk and 3/4 teaspoon of vinegar or lemon

1/3 cup of vegetable oil

1 egg

1/2 cup of coffee

1 tsp vanilla extract

Please note that this batter will produce about 10–12 cupcakes.

Now to the steps; I omitted the coffee from my batter because I am not a fan but you can go with it if you are. It also helps make it brown and helps the taste.

Step 1: Sift the measured flour into a clean bowl. You will want to make sure the bowl is big enough for mixing.

Step 2: Sift the measured cocoa powder into the bowl containing the flour

Step 3: Add the carefully measured baking soda. I added the word ‘carefully’ because this could make or mar your cupcakes.

Step 4: Add a quarter of a teaspoon of salt. once again, please adhere to the measurement

Step 5: Add a cup of powdered white sugar to the mixture, stir or whisk till even and set aside.

Step 6: Get another bowl and pour in the measured milk. I didn’t have buttermilk, so I used regular evaporated milk and added 3/4 teaspoon of white vinegar. If you don’t have vinegar, you could use the same amount of lemon.

Step 7: Add 1/3 cup of vegetable oil

Step 8: Add 1 egg, 1/2 cup of coffee, and 1 teaspoon of vanilla extract. I omitted the coffee and vanilla extract for my batter and whisk till it’s creamy

Step 9: Add in your flour mixture and stir till it’s fluffy. You might want to do this slowly and cup by cup so you can tell when to stop adding. This is so that you don’t end up with hard cupcakes.

Now that your batter is ready, you are finally ready for the last step;

Step 10: Preheat your oven to 175 degrees Celsius, and set your tin foil on your oven tray then pour in your batter, make sure you only fill up to 1/2 of the tin foil. Then bake for about 20 minutes and your cupcakes are all ready.

Will you try this recipe? let me know.

If you have questions, drop them and I will reply as soon as possible.
