The Easiest Vanilla Cupcakes Recipe Ever: Without Brown Sugar or Mixer

If you have read my article on 12 things to do this Christmas, my baking streak shouldn’t be new to you. In the article, I said I would be baking pastries I haven’t tried making before through December. Last Sunday, I tried making Chocolate cupcakes for the first time and they turned out yummy. This Sunday, I tried making Vanilla cupcakes and they were even yummier, so yummy my husband and I ate like 10 in one hour and I had to make another batch for the week. As it is my habit; once I find a recipe that works, I am on here sharing it with you guys so here we go.

Please note that the Recipe below makes 12 cupcakes

2 Cups of All Purpose Flour

2 Teaspoons Baking Powder

3/4 Cup of White Sugar

A pinch of Salt (make sure it’s really a pinch, I literally pinched the salt)

3/4 Cup of Milk

2 Eggs (at room temperature)

2 Teaspoons Vanilla extract or Powder

125g Unsalted Butter (Melted)

Please note that dry ingredients should be mixed together and set aside while you get started on the wet ingredients.

Tools You Would Be Needing

2 Dry Mixing bowls

An Egg whisk

Measuring Cups and Spoons

A Spatula

A Muffin Tray

Tin/ Paper Cupcake Foils

A Sieve

An Oven

Let’s get to baking

Step 1: Sift the measured flour into a dry mixing bowl. Make sure the bowl is clean and big enough for mixing.

Step 2: Pour your melted butter into the second bowl.

Step 3: Pour into the melted butter your measured sugar and whisk. Use your spatula or whisk to press the sugar against the walls of your bowl.

Please note that you may need to whisk after each step.

Step 4: Pour your eggs into the butter and sugar mix and whisk.

Step 5: Pour in your measured milk, make sure to pour it all, and then add your Vanilla extract (if that’s what you are going with but if you are going with the powder form, hold on)

Step 6: Whisk everything together to make sure the sugar is melting properly, be careful not to overmix, just give it a few whisks between steps.

Step 7: Pour in your sifted flour, baking powder, a pinch of salt, and Vanilla powder( if that’s what you are going with) and mix quickly, it should have a creamy look and a fluffy texture to it.

Step 8: Preheat your oven to 180 degrees Celsius. Grease your oven or muffin tray and set your tin or paper foils.

Step 9: Use your spatula or cookie/ ice cream scoop to pour your batter into the waiting foils. It should look like the image below;

Now put them in the oven for 15 minutes (maximum time for 180C or 350F). When you bring them out, they should look like this;

Let it sit and cool in your tray for a few minutes after you have brought them out of the oven. You can now enjoy your cupcakes, this is how mine looked;
